I usually use rotisserie chicken for this recipe, but you could easily swap it with leftover turkey to create a second meal that tastes just as good – if not better – than the first. (13) Mashed Potatoes

I make an ultra-creamy mashed potatoes recipe with crispy potato skins on top. The mashed potatoes are buttery and smooth, and the crispy skins on top are reminiscent of shoestring French fries.

To make my mashed potato recipe, you’ll need the following ingredients:

  • 5 lbs Yellow Gold potatoes, skins removed but reserved and cut into large chunks
  • 2 sticks of butter
  • 1 12/ cup of whole milk (or dairy-free milk)
  • 1-2 tsp Kosher salt, to taste

Add the chunks of peeled potatoes to a large stock pot and cover with water. Add the pot to the stovetop and bring to a boil, then reduce the heat to a rolling boil. Cook the potatoes until they’re fork-tender, then drain the water and set the potatoes aside.

Melt the butter in the same pot over low heat, then add the milk. Heat on low until the butter is melted and the milk is warm.

Add the potatoes to the butter/milk mixture and mash with a potato masher. Add 1-2 tsp of salt to taste.

To get the potatoes extra creamy, use your handheld immersion blender (pictured below) to blend the potatoes into a smooth and creamy texture. Add more milk if needed. Add the mixture to a medium-sized casserole or serving dish.

To make the crispy skins, slice the reserved potato skins into long slices. Toss the skins with a drizzle of avocado oil and sprinkle with salt. Add them to your air fryer and cook at 375º for 10 minutes or until crispy, agitating the air fryer canister from time to time to mix them.

Place the crispy skins on top of the mashed potatoes and serve immediately. You can make the potatoes ahead of time, but the crispy skins should be made just before serving. The crispy skins will become soggy if left on top of the potatoes too long, so you could alternatively serve the skins on the side and people can add their own on top.

(14) Crispy Brussels Sprouts Hummus Dip

If you love crispy Brussels Sprouts, you’ll love this appetizer. It’s crispy Brussels sprouts served on creamy hummus and topped with pumpkin seeds and pomegranate seeds. While it’s a delicious appetizer, you could ditch the hummus, air-fry the Brussels sprouts, and serve them as a beautiful Thanksgiving side dish.

(15) Gluten-Free Popovers

Instead of gluten-free dinner rolls, try making gluten-free popovers. You’ll need a popover pan to make them, but it’s worth the investment. These delicious popovers are buttery, flaky, and oh-so-doughy too.

(16) Mediterranean Rice

I know Mediterranean Rice doesn’t sound like it would go with Thanksgiving, but if you’re looking for a gluten-free stuffing alternative, rice is nice. This rice recipe reminds me of stuffing because it contains spices and chunky fresh vegetables.
