Because life’s choices are hard enough, these cookies are the best solution when you don’t know whether you want a brownie or a cookie. These Brownie Cookies are effectively the love child of a fudgy chocolate brownie and a bitesize perfect chocolate cookie, a serious crowd pleaser that works every time!

What are brownie cookies?

Although the name is pretty self descriptive, these cookies are made with a bater the resembles a brownie batter, they contain A LOT of chocolate, like, seriously, a lot of it, and very little flour, which makes them incredibly fudgy and dense, just like a brownie, but then they come in the shape of a beautiful cookie! The great thing about these cookies is that you can eat them on their own, or you can fill them up with your favourite frosting or even some delicious ice cream.

So what’s in these?

These brownie cookies are super easy to make and the best thing is that, unlike other cookies, they don’t require chilling time. The ingredients are very similar to the ones you’d use for brownies and that you may have around the house:

  • Cocoa powder
  • Flour
  • Baking powder
  • Dark chocolate
  • Butter
  • Eggs
  • Granulated sugar
  • Brown sugar
  • Vanilla extract

A few tips for success

Ok, so these are super easy to make, but there are a few tips to take your cookies to the next level. Btw, all these tips are based on previous mistakes!

  1. Be quick! – this may sound obvious, but chocolate solidifies, so given the amount of chocolate present in these cookies, if you don’t act quickly the batter will harden. If you can’t cook them all at once, you should scoop all the cookies out, otherwise you won’t even be able to scoop the batter out of your bowl.
  2. Use good quality chocolate – whether you use a chocolate bar or chocolate chips, make sure they are good quality and fresh. I once made these cookies with some old chocolate I found around the house and they were incredibly hard and didn’t have the crackly glossy texture they should have. My favourite chocolate to use is Food Thoughts’ dark chocolate chips and organic cocoa powder they are sustainable and the quality is unmatched!
  3. Do not overmix! – another lesson learned from experience. Use a hand mixer to mix the eggs and the sugar, but after that, mix everything by hand. If. you mix too much, your cookies will become cakey and won’t expand enough.

Fudgy Brownie Cookies

Ingredients (makes 12 – 14 brownie cookies):

  • 95 gr of plain flour
  • 2 tbsp of cocoa powder
  • 1 tsp of baking powder
  • 230 gr of melted dark chocolate
  • 60 gr of unsalted butter
  • 2 large eggs
  • A pinch of salt
  • 100 gr of granulated sugar
  • 90 gr of brown sugar
  • 1 tsp of vanilla extract

Method:

  1. Preheat the oven at 180 degrees celsius.
  2. Melt the butter and the chocolate together. You can do that either on the microwave or using a double boiler putting a bowl over simmering water (don’t allow the water to touch the bowl). Leave aside for 1 or 2 minutes to slightly cool down.
  3. In a bowl, combine the eggs, sugars and vanilla extract for about 3 minutes until the mix goes pale in colour. Once well combined, add the melted chocolate and butter and fold them in using a spatula until it’s fully combined.
  4. Fold in the flour, cocoa powder and baking powder until just combined. I like to sieve them in to avoid any lumps.
  5. Scoop the cookies into a pre-lined baking tray. If you can’t cook them all at once, make sure you scoop all of them out so the batter doesn’t solidify.
  6. Bake the cookies in the oven for 10 minutes until the edges are set but the middle is still gooey. Let them chill on the tray for 10 minutes and enjoy!
