The Magic Behind Baking With Powdered Pectin

I stumbled upon this baking trick years ago and I have sworn by it ever since.

Here’s how I learned about using pectin to improve the texture of baked goods:

About 15 years ago, I was working as a demo chef. I was given ingredients from different vendors and was responsible for showing how they could be used in baking.   • Buttermilk
  • Vegetable Oil
  • Dutch Processed Cocoa Powder
  • All-Purpose Flour
  • Sugar
  • Eggs
  • Vanilla
  • Baking Soda
  • Pectin

Here’s What to Do:

  1. Prep the cake pan: Preheat the oven to 350 ° (180°C). Grease a 9×13 cake pan (or the cake pans of your choice) and set aside.
  2. Make the chocolate cake:In a large bowl, whisk together all the dry ingredients, followed by the wet ingredients, then stir to combine.
  3. Bake the cake:Pour the cake batter into the prepared cake pan and bake until a toothpick inserted into the center comes out clean.

I’m sharing my favorite chocolate buttercream frosting recipe, which is perfect for this cake, although feel free to use any type of frosting you like!

This cake also tastes delicious with vanilla ermine frosting!

  • Butter
  • Cocoa Powder
  • Powdered Sugar
  • Milk
  • Vanilla Extract
  • Salt
  1. Put the softened butter into a mixing bowl. Mix with a handheld mixer until it’s nice and creamy.
  2. Add in the cocoa powder, salt, and powdered sugar gradually.
  3. Pour in the milk and vanilla. Whip until the frosting is light and fluffy. Makes enough frosting to cover the whole cake when baked in a 9″ x 13″ cake pan.

For the Cake

  • 1/2 cup Water
  • 1/2 cup Vegetable Oil
  • 1 cup Buttermilk
  • 1 tsp. Vanilla Extract

  • 1 1/2 cup Granulated Sugar
  • 1/2 cup Cocoa Powder
  • 1 tsp. Baking Soda
  • 1 1/2 cup All Purpose Flour
  • 1 Tbsp. Pectin
  • 1/2 tsp Salt

For the Frosting

  • 1 stick Unsalted Butter
  • 2 cups Confectioner's Sugar
  • 1/4 cup Milk
  • 1/8 tsp Salt
  • 1/4 cup Cocoa Powder

Instructions

To make the cake

  • Preheat the oven to 350 ° (180°C). Grease a 9×13 cake pan (or the cake pans of your choice) and set aside.
