After a six-month trip across China learning about and tasting the best dishes in the country, Andrew Wong returned home to London in 2012 to open his Pimlico restaurant A Wong. Bringing together dim sum dishes inspired by cuisines from across China, the understated restaurant quickly earned a sturdy reputation as one of the best Chinese restaurants in London, and gained its first Michelin star in 2017. Here, Wong lets us in on his favourite home-cooked meal.

How to make Andrew Wong's instant noodles with wagyu beef

‘There is no food snobbery here. Instant noodles are a staple in every Chinese household – just because they come from a packet doesn’t mean they’re inferior. There is something really nostalgic and comforting about cooking instant noodles. I used to love the Nissin ones when I was growing up. They sell them at most supermarkets and in my opinion they're the best! I like this dish because it utilises the ingredients most people will have in their store cupboards, and it shouldn’t take more than about three minutes to cook which is what makes it even more special. The addition of wagyu beef makes it a little more luxurious, of course.’ Andrew Wong

Ingredients

  • 800ml water

  • A pack of instant noodles (with sachet included)

  • 1 teaspoon of olive oil

  • Wagyu beef steak

  • 1 egg

  • 2 teaspoons of soy sauce

  • Salt and pepper to season

  • Garnish of spring onion and coriander

Method

Fill a saucepan with water and bring it to the boil. Add the instant noodles and boil for 3 minutes. Add the contents of the sachet that comes with the noodles to a bowl. Mix the noodles into the bowl with a little bit of the saucepan water. Next, put a frying pan on a medium heat with the oil. Meanwhile, season the wagyu beef with salt and pepper and then add to the frying pan. Fry for less than one minute on each side for a medium-rare steak, or as you like. Put the steak on top of the noodles and add a teaspoon of soy sauce over the steak. Fry the egg in the same pan you cooked the steak in for a minute or so until nearly cooked and put on top of the steak where it will finish cooking. Add another teaspoon of soy sauce onto the egg and garnish with spring onion and coriander.
