Dairy-free tortellini + winter = A match made in heaven

Especially when the weather gets colder, I love easy, no-fuss, comforting meals that feel fancier than they are. It’s also so exciting to me to get dairy-free versions of things that are hard to find just anywhere. That’s what I love about Kite Hill’s almond milk dairy-free tortellini. The ricotta alternative has been a delicious addition to my dinner rotation, especially for nights when I’m feeling like I need something cozy to eat.

My thoughts on Kite Hill Tortellini

The Kite Hill tortellini and ravioli line of entrees is great for anyone who is dairy-free or vegan, but the dishes are not gluten-free or nut-free – they are made with almond milk and contain bread crumbs and wheat flour. I’ve been eating mostly gluten-free these days (more on that in an upcoming blog), but I still eat some gluten, so this is an occasional treat for me.

I’ve been able to find Kite Hill’s vegan tortellini at Whole Foods, as well as at a local health food store less than a mile from my house. Depending on where I’ve found it, it can get pricey (about $9 a container in Wisconsin), but it is enough to make 2 or 3 meals, especially if you end up piling on the veggies like I do.

How I dress up my tortellini

My favorite way to eat this dairy-free tortellini is with Fody Low-FODMAP pasta sauce (I love the marinara, but they’re all really good), a handful of broccoli, red bell pepper, and some goat mozzarella shredded on top. If you’re totally vegan or avoid goat cheese, you could top with vegan mozzarella or parmesan. I also tend to add some green onions. For some added flavor, toss the vegan tortellini in an infused oil. I like to use garlic or red pepper if I want some more spice.

What I want to try next

While I haven’t tried the rest of the Kite Hill dairy-free tortellini or ravioli varieties, I’d really like to, especially the spinach tortellini and the butternut squash ravioli. I try to have this on hand for those nights when I’m tempted to order out, but can still convince myself to spend about 15 minutes prepping in the kitchen. While the water’s boiling, I’ll prep whatever vegetables I want to add and start heating up the sauce. The tortellini takes only 4-6 minutes to cook in boiling water. Easy, tasty, and comforting.
