Did I just sayholidays?!? Oh well, in some parts of the world, holiday celebrations start January 1st and go all the way to the end of December. So it’s perfectly fine to share holiday recipes any time of year.
Moreover, what I LOVE most is being able to prepare it in advance and bake it while getting ready in the morning! How’s that for an EASY BREEZY breakfast?
What’s in a Sausage Egg Casserole?
I get too excited when I share easy yet loaded recipes because it means you get a lot of bang for your buck! This sausage egg casserole delivers a hearty meal with little effort.And you can serve it for breakfast, lunch, oreven dinner! Wowza!!
Back to the subject! Sausage, eggs, and bread make the base, and the flavor is ramped up with cheese.This is the perfect opportunity to unleash your creativitybecause you can put almost anything. This easy breakfast casserole is ideal for cleaning out the fridge and not wasting food😉).
What You’ll Need for This Breakfast Casserole
- Pork Sausage– A pound should do, and it doesn’t have to be pork—chicken, turkey, and all-beef sausage work great.
- Eggsare the main attraction for a fluffy and filling casserole.
- Dairy– Milk and chees give the casserole body and flavor.
- Bread– What a great way to use day-old bread! Cut it into cubes for a filling bread pudding.
How to Make Sausage Egg Casserole
- Preheatoven to 350℉ (175℃).
- Sausage– In a large, deep skillet, cook sausage over medium-high heatfor about10 minutes until they’re no longer pink. They’ll be crumblyandevenly browned.
- Drainwell using a colander toremoveexcess grease andset asideto cool.
- Saute– Melt butter in the skillet, addonions, bell peppers,andgarlic.Cook over medium heat until tender, 3-5 minutes. Set aside and let cool.
- Assemble– In alarge bowl, whisk eggs and milk.Stir in the sausageand sauteed vegetables. Addshredded cheese, Creole seasoning, salt, baking powder, and melted butter. Mix untilthoroughlycombined.
- Prep Baking Dish– Lightly grease a 9×13-inch baking dish and arrange the cubed bread along the bottom. Pour the sausage and egg mixture over the bread,spreading out over the bread.
- Bakeit for 40-45 minutesoruntil goldenbrown. The casserole will be firm, anda knife inserted in the center will come out clean.Let it rest for about 10 minutes before serving. Enjoy hot!

Recipe Notes

Make-Ahead Prep
Prepare the casserole up to the point it’s ready to bake. Cover with plastic wrap or foil and refrigerate for a day or two or freeze for 2-3 months. Bake as per instructions when ready for breakfast.
Another time-saving hack is freezing it in individual portions. Use several ramekins instead of one baking dish. Shorten baking time to match.
How to Store Leftovers
When properly stored, you can keep this goodness for 3-4 days in the fridge. You could also freeze it for 2-3 months.Thaw it overnight in the refrigerator and baketo reheat.

- 1 pound (450g) pork sausage
- 1 tablespoon (14g) unsaltedbutter
- 1 medium yellow onion, chopped
- 1 medium green pepper, chopped
- 1 medium red pepper, chopped

- 2 cups (480ml) whole milk
- 1-1½ cups (113-170g) shredded cheddar cheese
- 1 tablespoon (12g) Creole seasoning
- ½ teaspoon (2g) salt
- 1 teaspoon (4g) baking powder
- ⅓ cup (75g) melted butter
- 2 cups (200g) cubed bread
- 2 green onions, sliced for an optional garnish
