Talkhan

Talkhan is a famous and traditional food, especially in the northern part of Kabul.
This traditional food is produced only from different types of mixed dry fruit such as dry mulberry, walnut, almond, sesame and roasted wheat but the main part of this food is dry mulberry (toot-e- Bedana and Shir toot) and walnut.
This food is mostly used by the local community and is one of the main foods of farmers and people who are working in Lapis Lazuli mines in Panjshir mountains due to its high holding capacity without specific conditions and high nutritional value. Today, local communities use this food on their special cultural occasions but are less used and known by other people.
In the rural areas of the north part of the country, this sweet food is mostly used in winter, because of its high energy. However, today Talkhan is considered one of the special sweet foods for local people, even many families who have traveled to Panjshir, Kapisa and Parwan purchased from the shops and use it sometimes.
This sweet food has a direct relation to the traditional local food culture of the indigenous people in Parwan, Kapisa and Panjshir provinces.
It has a long history going back to the 1st war between Afghanistan and England in 1842 while the local group of people fought without eating lunch it was a big question for other fighters why these people from Panjshir are not eating lunch and continually fighting. Then it became clear that they have their special food and still, a piece of Talkhan is in the UK national museum.
Most of the local people are interested due to its high nutritious value and energy. The other fact is, that it does not cause any thirst, heaviness in the stomach or fatigue after the eating this sweet food. This product is not produced only for their own consumption and even it is available in the local market in the northern province of Afghanistan and even in dry fruit markets.
Most of the younger generation do not value traditional food like Talkhan, but still the old people and some local communities are using it. It is important to preserve traditional products as part of the food and cultural heritage of Afghanistan especially the Talkhan as food which became the symbol of victory.
