Hi everyone!

I'm finally starting to come around to this whole fall thing. Even though the weather in the mountains hasn't cooled off at all really, the first leaves are starting to change and it's getting dark a little earlier. It's starting to slowly look like a new season. I'm sure cooler weather will hit soon. I even bought my first pumpkin food (cream cheese!) at the store Tuesday.

Another fall-inspired purchase I picked up at the store this week wasOcean Spray® Craisins® Dried Cranberries! I honestly LOVE the tangy bites of fruity goodness so much, that I buy them year-round, but there is something that just feels fall-ish to me about them. Maybe it's because they are a star of my famous Thanksgiving Vegetarian Stuffing? I end up buying five bags of them to cook my epic Thanksgiving feast!

If you guys haven't made a Crock Pot Granola recipe yet, stop what you are doing and get started! It's sooooooo simple.

You just toss the ingredients together and put them in the Crock Pot.They look so plain at first!

There are two tricks. First, leave the Crock Pot lid open just a small bit to let some steam escape, so it will not get soggy. It only takes a few hours to cook! The second is to stir it every thirty minutes so it will not burn.

Once it's done, you dump the granola out on a pan and add mix-ins like Craisins® Dried Cranberries. They bring a whole otherlevel of deliciousness to the dish!

I normally buy my Craisins® Dried Cranberries at Sam's Club but they're not on the shelves right now, so I shopped for them at Publix! I found them in the aisle near the trail mix and kids' fruit snacks.

The granola flavors are simple and delightful! It's sweetened with a touch of honey and the dried fruit, so it's a dish you can feel good eating.

You could easily make this a more indulgent granola by adding some white or dark chocolate chips, but I love how basic this version is. It really lets those cranberries shine!

Serve it on top of yogurt, smoothie bowls, or even as a cereal! Or just grab a handful as you are heading out the door. Any way you enjoy it, it's bound to become one of your favorites.

  • Coat a large Crock Pot with cooking spray.

  • In the Crock Pot toss the oatmeal, brown rice cereal, almonds and cinnamon together.

  • In a small bowl combine the egg whites, honey and vanilla. Mix together like scrambled eggs. Pour over the oatmeal mixture in the Crock Pot and stir until coated.

  • Put lid on the Crock Pot but leave a couple centimeters open to allow the steam to escape. This keeps it from getting soggy.

  • Cook on high for 2 hours or until cooked. Leave in longer for crunchier granola and exact cooking time could vary slightly depending on how hot your Crock Pot gets. Stir gently every thirty minutes to keep from burning.

  • Pour onto baking sheet and toss with the Craisins® Dried Cranberries.

Notes

Packaged granola has a touch of salt in it, so if you like that flavor you can add a pinch to the oats.
When you stir, be careful to not break up all the clumps.
You can find brown rice cereal in the healthy/gluten-free section of the grocery store. It's puffed brown rice instead of white. If you can't find brown rice cereal, feel free to sub white puffed rice cereal. Look for one without any added sugar. You don't need it here.
