Do ahead biscotti prep (2024)

My recipe says to refrigerate biscotti dough 30 minutes before the first baking. Can I refrigerate for longer? Like a day? That way I can get it ready one day and bake the next.

I agree with The Spiced Life -- I've left cookie dough in the fridge for up to 3 days, and it usually makes the cookies even better.

I would not bother putting it in the freezer unless it has some ingredient in it you think will go bad. I leave cookie dough in the fridge for ideally up to 3 days (have been known to do a bit longer too).

Yes but it needs to be placed on the frezer instead

Tips for making biscotti

Let the biscotti cool only for 10 minutes after first bake. If you leave the biscotti to cool for too long after the first bake the biscotti will be too tough to cut. You want to biscotti warm, but not hot or else it will crumble. Use a serrated knife and cut in a sawing motion.

How to keep biscotti from getting soggy? ›

To store biscotti, keep it in an airtight container at room temperature. Lining the container with a paper towel will help soak up any excess moisture that finds its way in. Biscotti will stay good for up to a month at room temperature and three months in the freezer.

Why are my biscotti crumbling when I cut them? ›

A: Overbaking the logs of dough during the first baking can make the slices crumble as you are cutting them. Also, even if the logs of dough are perfectly baked, they will crumble if they are sliced while still warm, so be patient. The logs crumble when you use a dull knife, too.

How long can you keep biscotti fresh? ›

We recommend keeping the biscotti in an airtight container in the cupboard. If stored properly, the biscotti will stay fresh for 30+ days. This is possible because of the twice baked nature of the cookie.

Do biscotti harden as they cool? ›

After the first bake, allow the biscotti to cool for about 10 minutes but don't leave them too long. If you leave them too long the dough will become too hard and it will be difficult to cut, but if you cut them when they are hot the slices will crumble.

For crumble-free cutting, spray baked biscotti logs with water. Once your biscotti logs are baked it's time to slice them — hopefully without crumbling! I like to mist the logs with water and wait 5 minutes, then cut.

Why cut biscotti diagonally? ›

If you stand up your slices on the baking pan, with a little space in between, they crisp up better. The thing that makes biscotti biscotti is baking them in a log, slicing them on the diagonal, and then baking them a second time so they are crispy all the way through.

Sifting your ingredients together help avoid the hard middle in your biscotti! Don't overbeat the eggs. You want just enough air pockets to add some crispiness and texture, but not so many that you get a lot of crumble in your biscotti instead. Don't overmix the batter.

Can I refrigerate biscuit dough overnight? ›

The dough is easy to make and can be made a day in advance. Wrap the dough discs tightly in food wrap and store in the fridge overnight. Remove the dough from the fridge about 20 minutes before you want to roll it and leave it on the worktop to soften slightly before you roll it out.
