Hummus is a great addition to the GD Diet, packed with heart-healthy fats and some protein too, it makes for a great plant-based snack or as a condiment to add to a meal.

Have a little Springtime fun by placing the hummus in plant pots and serving with carrots with the tops on. This makes for a great Easter fun but healthy treat! For little ones, use mini carrots with a sprig of parsley for the tops!

Equipment

  • Food processor or hand blender

Ingredients

  • 400 grams tinned chickpeas drained and rinsed
  • 3 tbsp tahini
  • 1 large lemon, juice only
  • 50 ml olive oil
  • 1 large clove of garlic crushed
  • a good pinch salt and ground black pepper
  • a pinch paprika (optional)

Instructions

  • Drain and rinse the tinned chickpeas and place in a food processor

  • Add the tahini, olive oil, lemon juice and garlic and blitz to your desired consistency (add more olive oil if necessary to losen the hummus), taste and season to your liking

  • Decant the hummus into a sealable container and drizzle with more olive and seeds, or a good pinch of paprika if you wish
