John Wayne casserole is an easy dinner casserole. Layers of biscuit crust, ground beef, cheese, sour cream, and slices of fresh tomatoes.

Ingredients

Taco Seasoning

  • 1 Tablespoon chili powder*
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red chili flakes
  • 1/4 teaspoon dried oregano

Casserole:

  • 1 pound lean ground beef
  • 1/2 cup water
  • 1 medium onion (sliced then cut in half, about 1 cup)
  • 1 medium red bell pepper (sliced then cut in half, about 1 cup)
  • 1 can mild RO-TEL (drained)

Crust:

  • 2 1/2 cups Bisquick
  • 2/3 cup water

Topping:

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 cups freshly shredded sharp cheddar cheese (divided)**
  • 2 roma tomatoes (sliced thin)

Instructions

  1. Preheat the oven to 325F. Use cooking spray to grease the bottom and sides of a 9x13 casserole dish.
  2. Heat a large nonstick skillet over medium-high heat, then add the ground beef. Cook and crumble the ground beef until browned (about 8 minutes). Drain away the excess fat, then return the pan back to the stove top. While the beef is cooking, prepare the crust.
  3. In a large mixing bowl, mix the Bisquick and water together, creating a sticky dough. Transfer the dough to the prepared casserole dish, then evenly spread it across the bottom and bring it up the sides about 1 1/2”. Where the dough pulls apart, pinch it together to seal it.
  4. Once the beef is cooked and drained, turn the heat down to medium-low. Add the taco seasoning ingredients to the beef and mix in. Next, add 1/2 cup of water, onions, red pepper, and the RO-TEL. Simmer for 5 minutes.
  5. While the beef is simmering, make the topping. To a small bowl, add the mayonnaise, sour cream, and 1/2 cup cheese. Stir together and set aside.
  6. Put the beef mixture on top of the Bisquick dough and spread it out evenly.
  7. Spread an even layer of the sliced tomatoes over the beef mixture, then spread the mayonnaise topping over the tomatoes, and then top it with the rest of the shredded cheese.
  8. Place the dish in the preheated oven and bake until the edges are lightly browned, about 35-40 minutes.

Notes

*This is a spice blend sold in the US and Canada that’s much more mild than the pure chili powder sold in the UK or other parts of the world.

**I recommend using freshly shredded cheese because pre-shredded cheese is coated in an anti-caking agent that stops it from melting smoothly.
