Ingredients of Khandvi Recipe

  • 1 cup besan flour
  • 3/4 cup sour curd
  • 1 tsp ginger and chilli paste
  • 4 teaspoons coconut powder
  • 2 tbsp coriander leaves ( chopped )
  • 1/4 teaspoon turmeric powder
  • 3 cups of buttermilk
  • ½ teaspoon asafetida (hing) seeds
  • A pinch of salt or to taste

For Seasoning

  • 1/4 cup mustard seeds
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • Curry leaves
  • 1 1/2 inch piece ginger
  • 3 green cardamom pods

Instructions for Khandvi Recipe

Soak besan flour in water for at least 30 minutes or until it doubles in size.

This will help the batter stick to the khandvi sticks better.

In a bowl, mix together besan flour, sour curd, ginger, and chili paste well.

Add coconut powder, coriander leaves (chopped), turmeric powder, and asafetida seeds.

Mix everything together well until all ingredients are fully incorporated into the batter. (If you find some lumps in the batter, just smooth it out with your hands)

Add buttermilk to the batter and mix everything together until a smooth consistency is achieved.
