1) Tuna mornay
Cook diced celery and onion in 50g melted butter. Add 1/4 cup plain flour. Cook for 1 minute. Gradually add 2 cups milk, stirring constantly, until mixture boils and thickens. Stir in grated cheddar cheese and flaked tuna. Spoon mixture into an ovenproof dish. Sprinkle with breadcrumbs and drizzle with extra melted butter. Bake at 180C/160C fan-forced for 15 to 20 minutes or until golden.
2) Spaghetti with tuna and lemon
Cook 230g dried spaghetti pasta. Drain.
Heat extra virgin olive oil in a frying pan. Add 1/2 small finely chopped red onion and crushed garlic and cook until softened. Remove from heat. Add hot pasta, flaked tuna, lemon rind, lemon juice and chopped flat-leaf parsley. Season with salt and pepper. Toss to combine.
3) Tuna with soy and sushi rice
Cook 2 cups rinsed sushi rice following packet directions. Cool. Drizzle rice with 1/4 cup sushi seasoning. Fold with a spatula to combine. Fold in 3 teaspoons soy sauce, flaked tuna, sliced green onion, toasted sesame seeds and finely chopped cucumber. Season with salt and pepper. Sprinkle with sliced toasted nori sheets, if you like.
4) Potato and tuna cakes
Boil 3 large peeled potatoes until just tender. Drain, mash and set aside to cool. Add flaked tuna, sliced green onion, chopped dill and 1 1/2 cups grated cheddar cheese. Season with salt and pepper. Shape into patties. Coat patties in plain flour, then dip in lightly beaten egg, then coat in breadcrumbs. Refrigerate for 30 minutes. Shallow-fry until golden. Serve with salad and lemon wedges.
5) Indian-style tuna and rice
Place 2 cups basmati rice with 3 cups cold water in a saucepan over high heat. Bring to the boil, then reduce heat to low. Simmer, covered, for 10 minutes. Add chopped green beans and cook for 4 minutes or until tender. Stir in 1/4 cup Indian curry paste, halved cherry tomatoes and flaked tuna. Cook until tomato softens. Stir in chopped coriander. Season with salt and pepper. Serve topped with plain yoghurt.
6) Creamy tuna and broccoli pasta bake
Cook 3 cups pasta spirals in boiling water, adding broccoli florets towards the end of cooking. Drain. Cook chopped onion and garlic in oil. Add 1/4 cup plain flour, flaked tuna, frozen peas and 2 x 375ml cans evaporated milk. Season with salt and pepper. Add pasta and combine. Spoon into an ovenproof dish and sprinkle with grated tasty cheese. Bake at 180C/160C fan-forced for 30 minutes or until heated through.
7) Buckwheat soba and tuna salad
Cook buckwheat soba noodles. Refresh under cold water. Toss noodles with flaked tuna, chopped tomato, chopped avocado, juice of a lime and fried shallots. Season with salt and pepper.
8) Nicoise salad
Combine boiled chat potatoes, blanched baby green beans, flaked tuna, small black olives, halved anchovy fillets, quartered boiled eggs and torn baby cos lettuce leaves. Serve drizzled with French dressing.
9) Tuna, white bean and spinach salad
Combine tuna, baby spinach, halved grape tomatoes, chopped red capsicum, drained cannellini beans, chopped cucumber and chopped oregano. Season with salt and pepper. Combine olive oil, white balsamic vinegar, crushed garlic and drizzle on top.
10) Tuna bruschetta
Brush slices ciabatta bread with olive oil. Grill until golden. Combine crushed garlic, flaked tuna, finely diced tomato, chopped basil, lemon zest and baby capers. Season with pepper. Spoon onto ciabatta and drizzle with a little extra virgin olive oil.
