Chorizo Christmas Sausage Rolls

A tasty spin on tradition, our chorizo sausage rolls are bursting with flavour and a great choice for the party season. Pile them high for your Christmas get-togethers or pair with roasted Mediterranean vegetables for a tasty winter warmer.

Bake Time: 25 minutes

Ingredients:

3 shallots
1tsp olive oil
4 chorizo cooking sausages (roughly the same size as normal sausages – or make up with smaller versions)
4 good pork sausages
2tsp fennel seeds
1tbsp chopped parsley
1 x 320g Jus-Rol Puff Pastry Sheet
1 egg, beaten with a fork

Equipment required:

Frying pan
Pastry Brush

Method:

  1. Preheat the oven to 200°C (180°C fan oven) Gas Mark 6. Soften the chopped shallots in the oil in a small frying pan then allow to cool.
  2. When the shallots are cool, transfer to a mixing bowl. Squeeze in the meat from all the sausages, discarding the skins. Sprinkle over 1 tsp of the fennel and the parsley and mix everything together.
  3. Unroll the pastry and cut it in half to make two long, thin strips.
  4. Divide the sausage mixture roughly in two, and shape the first half into a thin sausage running alongside the longer edge of one of the pastry strips. Tightly roll the sausage meat up inside the pastry, rolling the whole log on a lightly floured surface a few times at the end to stick the join. Turn the long sausage roll over so the seam is underneath, then brush all over with some more egg and sprinkle with half of the remaining fennel seeds. Use a sharp knife or scissors to cut into 6 mini sausage rolls.
  5. Repeat step 4 a second time so you end up with 12 sausage rolls. Space them on a baking sheet and bake for 20-25 minutes until golden, crispy and cooked through.

Generally, you don’t need to cook the filling before you make a sausage roll. The amount of time it takes to bake a sausage roll will cook your average sausage meat mixture to perfection. If you’re adding extra ingredients or making a veggie alternative, like our mushroom and squash sausage rolls, you may need to fry or roast some of the elements before you turn them into a filling.

Can you freeze sausage rolls?
Yes, you can freeze sausage rolls. In fact, they are particularly easy to freeze and bake. For the best result, freeze your sausage rolls before they have been cooked. You can freeze cooked sausage rolls too, just be sure to let them cool to room temperature first.

If you’re freezing freshly made and uncooked sausage rolls, place them apart on a tray lined with greaseproof paper and pop in the freezer for a few hours to stop them from sticking together. Once they are solid, you can take them out and transfer to a container and keep for up to three months. Bake from frozen and enjoy!

How long do sausage rolls last in the fridge?
A cooked sausage roll will last in your fridge for up to three days. Be sure to pop it in the fridge once it’s cooled down though, as a sausage roll shouldn’t be left at room temperature for more than two hours. If you freeze your sausage roll, it will last for up to three months.

Who invented sausage rolls?
There’s no cut and dried answer when it comes to the original inventor of the sausage roll – largely because the custom of wrapping meat up in pastry dates all the way back to Ancient Greek and Roman times!
That said, a shortcrust version of sausage rolls grew very popular in London in the early 1800's when they were sold as street food. The nice and flaky version we’re all familiar with now may have originated in France, where puff pastry grew very popular after being developed in Spain in the 1600's.

Can you cook sausage rolls in an air fryer?
Yes, you can most certainly cook sausage rolls in the air fryer. It’s actually a great way to bake them, especially if you’re cooking from frozen. Be sure not to lay them too close together, as the pastry will expand when baked, and brush with a little oil, butter or egg for a lovely golden glaze. Be sure to adjust your cooking time and check your air fryer’s manual, as they typically cook faster than they would in the oven.
